Crustless potato and bacon quiche

    This crustless potato and bacon quiche uses frozen hash browns for an easy, cheesy dish that's great for breakfast, brunch or dinner.

    Serves: 8 

    • 1 teaspoon butter
    • 8 eggs
    • 240ml double cream
    • 1 tablespoon salt, divided
    • 1 teaspoon freshly ground black pepper
    • 400g frozen hash browns
    • 140g grated mature Cheddar cheese
    • 100g cooked bacon, chopped
    • 25g chopped spring onions

    1. Preheat oven to 180 C / Gas 4. Grease a 23cm quiche tin with butter.
    2. Whisk eggs together in a large bowl. Add cream; whisk until well-blended. Season with 1 1/2 teaspoon salt and 1/2 teaspoon black pepper.
    3. Combine hash browns, grated cheese, bacon and spring onions in another bowl. Season with remaining 1 1/2 teaspoon salt and 1/2 teaspoon black pepper.
    4. Pour the egg mixture into the greased tin. Add the hash browns mixture gently, making sure that some of the hash browns stay above the egg mixture. Place tin on a baking tray.
    5. Bake in the preheated oven until a skewer inserted in the centre of the quiche comes out clean, about 45 minutes. Let quiche stand until set, about 10 minutes, before slicing into wedges.


    If you like, you can add more grated cheese on top 5 minutes before removing the quiche from the oven.
