Mexican-inspired breakfast burritos

    Ingredients
    Serves: 2 

    • 4 slices bacon
    • 75g refried beans
    • 2 flour tortillas
    • 1 tablespoon vegetable oil
    • 2 eggs
    • 2 tablespoons egg whites
    • 40g grated Cheddar cheese
    • 2 tablespoons salsa
    • 2 tablespoons soured cream

    Method

    1. Preheat oven to 110 C / Gas ¼. Wrap tortillas in foil; place in the preheated oven.
    2. Fry bacon in a pan over medium heat until crisp and cooked, about 5 minutes. Remove bacon from pan; stir refried beans in the same pan used to cook bacon until heated through, about 1 minute. Cover beans and remove from heat.
    3. Whisk together eggs and egg whites in a bowl until uniform, about 1 minute. Heat oil in a pan over medium heat, add egg mixture. Cook and stir until almost solid, about 2 minutes; stir in Cheddar cheese and remove from heat.
    4. Top each warm tortilla with 2 tablespoons of refried beans, 2 slices of bacon, half of the eggs, 1 tablespoon of salsa and 1 tablespoon of soured cream. Roll tortillas into burritos.
