Easy fluffy banana cookies

    My daughter loves to help make these soft banana cookies. She peels the bananas, mashes and mixes. It's so fast and easy. Any time we have a couple bananas going brown we mix up these! The recipe originated as banana bread, but one day I was in a rush and didn't want to wait an hour for the bread to bake so I made them as cookies and we all like them better this way.

    Serves: 12 

    • 2 ripe bananas, mashed or more to taste
    • 200g plain flour
    • 100g caster sugar, or more to taste
    • 55g butter, melted
    • 30g chopped walnuts (optional)
    • 1 egg
    • 1 teaspoon bicarbonate of soda
    • 1/4 teaspoon salt
    • 1 tablespoon caster sugar

    1. Preheat oven to 160 C / Gas 3. Line a baking tray with baking parchment.
    2. Place mashed bananas, flour, 100g sugar, butter, walnuts, egg, bicarbonate of soda and salt in a bowl. Mix until well combined. Drop tablespoonfuls of the mixture 5cm apart onto baking tray. Sprinkle 1 tablespoon sugar on top of cookies before baking.
    3. Bake in the preheated oven until golden brown and edges are set, 15 to 20 minutes.
