These are simple almond biscuits from French Alsace. Leave them plain or drizzle with some melted chocolate.

Ingredients
Makes: 40 biscuits
100g icing sugar
50g finely ground almonds
200g butter, diced and softened
1 egg
250g plain flour
1 pinch salt
1 teaspoon vanilla sugar
2 tablespoons water
1 egg yolk, lightly beaten
1 handful flaked almonds
melted chocolate for drizzling (optional)

Mix half of the icing sugar with the ground almonds in a bowl. In another bow beat the rest of the icing sugar with butter and the egg until light and fluffy.
Mix the content of both bowls. Add flour, salt and vanilla sugar and mix well. Add 2 tablespoons water so the mix holds together. Wrap in cling film and refrigerate for 2 hours.
Preheat the oven to 150 C / Gas 2. Grease a baking tray.
Roll out the mixture on a floured word surface. Using biscuit cutters, cut out shapes of your choice. Brush the biscuits with egg yolk and sprinkle with flaked almonds.
Bake in the preheated oven until lightly coloured, about 15 minutes.
