Cut the salmon into small cubes. Mix in a bowl with half of the lemon juice. Mince the coriander and add to the salmon. Refrigerate.
In another bowl, stir the cheese and quark with half the remaining lemon juice until smooth.
Cut the avocado into small cubes and mix in a bowl with the rest of the lemon juice.
Crush the crackers and distribute them in small glasses. On top of this put a half of the cheese, then the salmon and finally chopped avocado. Top with the rest of the cheese.
