Dad's spaghetti Bolognese with bacon

    This is my dad's homemade spaghetti Bolognese recipe with bacon, which adds a rich flavour to the sauce.

    Serves: 4 

    • 1 tablespoon olive oil
    • 2 medium onions, finely chopped
    • 2 garlic cloves, finely chopped
    • 4 rashers of bacon, finely chopped
    • 1 beef stock cube
    • 2 teaspoons dried basil
    • 1 teaspoon dried parsley
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • 500g beef mince
    • 1 (400g) tin chopped tomatoes
    • 2 tablespoons tomato puree
    • 2 bay leaves
    • 100ml red wine (optional)
    • 400g spaghetti
    • fresh basil leaves, to serve
    • Parmesan, to serve
    • garlic bread, to serve

    1. Heat olive oil in a pan over medium heat. Add onions, garlic and bacon and fry for 1 to 2 minutes.
    2. Add the stock cube, dried basil, parsley, salt and pepper. Stir and continue to fry until onions are brown and bacon is cooked.
    3. Add the mince. Gently break up the mince and fry until all brown.
    4. Add tin of chopped tomatoes, tomato puree, bay leaves and wine (optional). Stir until thoroughly mixed in.
    5. Put lid on pan and simmer over low heat for 45 to 60 minutes, stirring every 10 minutes.
    6. Remove bay leaves from the sauce. Cook the spaghetti according to package directions and drain.
    7. Serve with basil leaves, Parmesan and garlic bread.
