Swedish chocolate goo cake

    This soft gooey chocolate cake tastes incredible with a small amount of Chinese five spice. It is best to let it chill overnight before serving.

    Serves: 8 

    • 100g butter
    • 250g sugar
    • 1 teaspoon vanilla extract or vanilla sugar
    • 200g plain flour
    • 50g cocoa powder
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 2 eggs
    • 1 pinch Chinese five spice

    1. Preheat the oven to 175 C / Gas 3-4.
    2. Melt the butter in a pot. In a bowl add all of the other ingredients and mix well until smooth.
    3. Place a cake tin with a removable base on a baking tray. Pour the mixture into the cake tin.
    4. Bake in the lower part of the oven until set, about 12 minutes. Remove from the oven, let the cake cool and refrigerate for at least 2 hours, preferably overnight.
