Christmas leftover pies

    Turn your Christmas leftovers into delicious individual pies packed with mashed potatoes, turkey and cranberry sauce!

    Ingredients
    Serves: 4 

    • 2 sheets frozen shortcrust pastry, thawed
    • 100g leftover mashed potatoes
    • 75g leftover cooked turkey, finely shredded
    • 75g cranberry sauce
    • 1 egg
    • 1 tablespoon water

    Method
    Prep:15min  ›  Cook:15min  ›  Ready in:30min 

    1. Preheat oven to 230 C / Gas 8. Line a baking tray with parchment.
    2. Roll each sheet of pastry out on a lightly floured work surface; slice each one into quarters.
    3. Spread about 2 tablespoons mashed potatoes onto 4 of the pastry quarters, spreading to within 1/2 cm of the edges. Top mashed potatoes with 2 tablespoons turkey and 1 tablespoon cranberry sauce.
    4. Whisk egg and water together in a bowl. Brush egg mixture onto outside edges of prepared pastry. Top each filled quarter with remaining pastry quarters; press and crimp edges with a fork to seal. Cut a slit in the top of each pastry wedge and brush each with egg mixture. Transfer pies to prepared baking tray.
    5. Bake in the preheated oven until golden brown, 15 to 20 minutes.

    This was the first time I tried this recipe and it was awesome! I used mashed potatoes, stuffing, cranberries, and turkey & chicken and they didn't disappoint. It takes 20 min. of prep and 20 min to cook when I made them. I used jar gravy to dip them in and they were great!  -  30 Nov 2014  (Review from Allrecipes US | Canada)
