Greek yoghurt brownies

    These moist wholemeal brownies are made with Greek yoghurt instead of butter and apple sauce instead of eggs for a low fat treat!

    Ingredients
    Serves: 16 

    • 300g caster sugar
    • 120g wholemeal flour
    • 85g cocoa powder
    • 1 1/2 teaspoons baking powder
    • 1/8 teaspoon salt
    • 200g 0% fat Greek yoghurt
    • 120ml brewed coffee (or water)
    • 120ml apple sauce
    • 2 teaspoons vanilla extract

    Method

    1. Preheat oven to 180 C / Gas 4. Lightly grease a 20cm square baking tin.
    2. Mix sugar, flour, cocoa powder, baking powder and salt together in a large bowl. Push mixture to the sides of the bowl to form a well in the centre.
    3. Combine yoghurt, coffee, apple sauce and vanilla extract in a small bowl. Pour yoghurt mixture into the flour mixture. Fold gently with a spatula until just combined. Spread in the prepared tin.
    4. Bake in the preheated oven until centre is firm to the touch, 45 to 55 minutes. Cool slightly before cutting into squares, about 15 minutes.
