    • 3 eggs
    • 150ml olive oil
    • 240g natural yoghurt
    • 150g jarred pitted black olives, halved
    • 2 tablespoons dried mint
    • 1 onion, minced
    • 1 teaspoon salt
    • 1 teaspoon baking powder
    • 250g plain flour

    1. Preheat oven to 190 C / Gas 5.
    2. In a large bowl mix eggs, oil and yoghurt until smooth. Add the olives, mint, onion and salt. Mix well using a whisk. Add the baking powder and flour and mix till thick and evenly combined.
    3. Grease a baking tray or baking dish. Transfer the mix to the dish.
    4. Bake in the preheated oven till golden, about 30 to 40 minutes.
    5. Remove from oven and let it rest for at least a hour before serving.


    Instead of black olives you can use other olives of your taste.
