Sausage and lentils

    A simple dish with a distinct flavour that will leave you craving more. Lentils are cooked with sausage and cumin to make a fast and satisfying meal that is ready in under 30 minutes with minimal effort. Use any type of cooked sausage. I have used leftover thick pork sausages, Polish sausage and chorizo - all with lovely results.

    Ingredients
    Serves: 4 

    • 700ml water
    • 200g dried lentils
    • 85g chopped onion
    • 225g fully cooked thick sausage, sliced
    • 1 teaspoon ground cumin
    • salt and pepper to taste

    Method
    Prep:5min  ›  Cook:20min  ›  Ready in:25min 

    1. Combine water, lentils and onion in a saucepan over medium heat. Bring to the boil; cook for about 15 minutes. Add sliced sausage and season with cumin, salt and pepper. Simmer until lentils are tender, about 5 to 10 more minutes.

    This turned out much better than I expected with a couple of tweaks. As written it seems it would be filling but a tad bland. I used a venison sausage, added some chili powder and garlic along with the cumin, and some tomato sauce as well.     For lentils this was actually pretty good! I never know what to do with the lentils I have in my pantry, and this was quite tasty, and QUICK! I used turkey polska keilbasa and served it with sauted paper-thin sliced carrots and onions. It took a lot of salt and pepper to make it palatable at first, but the end result was great, especially when I mixed in the extra vegetables.
