Chocolate marshmallow cookies

    The flavour of these chocolate flourless cookies are based on Mexican hot chocolate. They are cripsy on the outside with a delightful gooey centre.

    • 45g cocoa powder
    • 100g caster sugar
    • 1/2 teaspoon ground cinnamon (optional)
    • 1/8 teaspoon cayenne pepper (optional)
    • 250g icing sugar
    • 3 egg whites
    • 2 teaspoons vanilla extract
    • 1/2 teaspoon salt
    • 50g mini marshmallows

    1. Preheat oven to 180 C / Gas 4. Line 2 baking trays with baking parchment and lightly grease the paper.
    2. Combine cocoa powder, caster sugar, cinnamon and cayenne pepper in a bowl. Mix in icing sugar, egg whites, vanilla extract and salt until the mixture is smooth. Fold in marshmallows.
    3. Drop mixture by rounded tablespoons onto the prepared baking trays.
    4. Bake in the preheated oven, rotating halfway through baking, until edges are set, 10 to 12 minutes. Cool on baking trays. Remove carefully, as centres are soft.
