Eggnog icing

    A quick and easy cream cheese icing flavoured with eggnog. Lovely to use on a Christmas carrot cake or ginger loaf cake.

    Serves: 20 

    • 500g icing sugar, or as needed
    • 60g butter, softened
    • 3 tablespoons eggnog
    • 2 tablespoons cream cheese, softened
    • 1 tablespoon milk
    • 1/2 teaspoon vanilla extract

    1. Combine icing sugar, butter, eggnog, cream cheese, milk and vanilla extract in a bowl. Beat with an electric mixer until creamy. Add more icing sugar to reach the desired consistency if needed.
