Oven cooked Bolognese sauce

    This Bolognese ragu sauce with pork and beef is slow cooked in the oven.

    Serves: 8 

    • 1 teaspoon olive oil
    • 2 onions, thinly sliced
    • 500g beef mince
    • 500g pork mince
    • 1 pack (265g) unsmoked streaky bacon, chopped
    • 500g passata
    • 1 (420g) tin of chopped tomatoes
    • 150ml dry white wine
    • salt and pepper to taste

    1. Preheat the oven to 140 C / Gas 1.
    2. Heat the olive oil in an ovenproof casserole pan with a lid. Add onions and fry until translucent. Add the beef and pork and fry until no longer pink. Drain off the excess fat.
    3. Add the bacon and the wine. Cook until the wine has evaporated, about 6 to 7 minutes.
    4. Add the passata and tinned tomatoes and bring gently to the boil. Reduce the heat, place a lid on the pan and place in the oven.
    5. Cook for 2 to 3 hours. Season with pepper and salt to taste.
