Coconut Rice

    This simple rice is the perfect side dish for an Indian curry. The coconut cream adds a delicious richness to plain old rice.

    Ingredients
    Serves: 6 

    • 400 g long-grain rice
    • Salt (about ¼ teaspoon)
    • 185 ml coconut cream

    Method

    1. Wash rice and cover with about 1 litre of water. Set aside for 30 minutes to soak, then drain.
    2. Bring about 750 ml water to the boil. Add rice and salt. Reduce heat and cook, covered, until rice is just cooked (about 12 minutes).
    3. Remove rice from heat and add coconut cream. Stir gently. Cover and set aside until rice absorbs coconut cream.
