Simple margarita cake

    The special ingredient in this simple cake is bottled margarita mix, which can be purchased online.

    Makes: 1 cake

    • 4 tablespoons bottled margarita mix
    • 400g caster sugar
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 500g plain flour
    • 1/2 teaspoon salt
    • 6 teaspoons baking powder
    • 240ml milk
    • 240ml water

    1. Preheat the oven to 180 C / Gas 4. Grease a 23x30cm baking tin.
    2. Cream margarita and sugar, then add eggs and vanilla. Add dry ingredients alternatively with milk and water and stir until well combined.
    3. Tip mixture into the prepared tin and bake until a tester comes out clean, 30 to 50 minutes.


    Substitute water with milk for extra flavor, or milk with water if milk is not available.
