Saffron rice

Saffron is expensive, but it adds a wonderful luxurious flavour to rice. Serve with Indian and Persian dishes.

I have never cooked rice in a frying pan before, but this is easy and really delicious. It kept warm very well too.

Absolutely yummy. I didn't have bay leaves so I used fresh thyme instead. 1/4 teaspoon equals 1 bay leaf. I also added too much salt, 1 and a half teaspoon of himalayan salt. Will defo make again but use less salt

This is the easiest but most authentic curry rice dish I've ever made everybody loved it. It is now my go to dish

This recipe is fantastic to cook! We had friends over this weekend for dinner and served it with barbecued tandoori chicken, a tomato and balsamic salad and curried chick peas. We all loved it! I did not let mine simmer though but kept tossing it, while it was cooking. I think soaking it first is a major reason for the success of this rice! We shall be cooking this on a regular basis! Thank you!
