Buffalo chicken calzone

    This chicken calzone with buffalo sauce and mozzarella is very easy to make with ready rolled pizza dough. Great to slice up and share if you're expecting a crowd of hungry teenagers.

    Serves: 4 

    • 450g skinless, boneless chicken breast halves
    • 2 tablespoons butter
    • 60ml buffalo wing sauce
    • 1 ready rolled pizza dough base
    • 2 tablespoons vegetable oil, divided
    • 225g grated mozzarella cheese

    1. Preheat oven to 200 C / Gas 6. Grease a pizza pan.
    2. Place chicken into a large pot and cover with salted water; bring to the boil. Cook the chicken breasts until cooked through, about 15 minutes. Transfer chicken to a bowl and shred with two forks.
    3. Melt butter in a pan over medium-high heat. Cook and stir chicken and buffalo wing sauce in the hot butter until chicken is coated and heated through, 2 to 4 minutes.
    4. Turn pizza dough out onto a generously floured surface. Shape dough into a 30cm round base. Brush dough with 1 tablespoon vegetable oil and spread half of thr grated mozzarella cheese in the centre of the dough, leaving a 2cm border. Spread chicken mixture over cheese; top chicken mixture with remaining grated cheese.
    5. Fold pizza dough in half and pinch edges together to seal. Transfer calzone to prepared pizza pan and brush top with remaining 1 tablespoon oil.
    6. Bake in the preheated oven until calzone is golden brown, 17 to 20 minutes.

    This was my first attempt at making a calzone. I had bought a bottle of Frank's Red Hot sauce and had no idea what I was going to do with it. I used a fresh made pizza dough from my bread machine. This was the perfect recipe to use the hot sauce. I added mushrooms. Just fabulous. Will make again.     Recipe Group Selection: 31, January 2015 ~ My DH and I really enjoyed this calzone. I changed my cooking method to baking the chicken, as Christina did. I baked the chicken the day ahead and reheated on the stove top with the butter and buffalo sauce. We like celery with our buffalo dishes, so I made half the calzone as written and the other half I added diced celery to the chicken mixture. When I make this again, I will add celery to all of it. This is very filling and lasted us for 2 dinners with enough leftover for DH lunch. Great recipe that I will make again.     I made this calzone for a New Year's Eve party and it was gone before any other item. I made it again the next night for my family and the neighborhood kids and they raved about it. To save time I bought a 2lb prepared chicken at the grocery store and shredded that. This recipe was super fast and super good.
