Spiced vegan hot chocolate

    If you use coconut milk and dark chocolate to make hot chocolate, it is naturally vegan. The curry powder is a lovely addition.

    • 240ml light coconut milk
    • 30g dark chocolate, chopped
    • 1 1/2 teaspoons sugar or other sweetener
    • 1/8 teaspoon curry powder (optional)

    Method

    1. Heat coconut milk in a saucepan over medium-low heat until warm, 3 to 5 minutes. Add chocolate and sugar; whisk until incorporated and chocolate is melted. Pour mixture into a blender and add curry powder. Cover and hold lid down; blend until smooth, about 15 seconds.

    Tip:

    Use an immersion blender directly in the pot to blend in curry powder.
