Gluten free brownies with only natural sugars added. No one will ever know they contain avocados. I know it sounds crazy, but the avocados really do work! They make these brownies very creamy.

175g 70% dark chocolate
1 tablespoon coconut oil
3 avocados - peeled, pitted and diced
20g unsweetened cocoa powder
1 tablespoon coconut flour
1 teaspoon vanilla extract
1 teaspoon bicarbonate of soda
1 teaspoon salt

Preheat oven to 180 C / Gas 4. Lightly grease a traybake tin.
Melt chocolate with coconut oil in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each melting, 1 to 3 minutes.
Place diced avocado in a food processor; blend until completely smooth.
Whisk eggs, honey, cocoa powder, coconut flour, vanilla extract, bicarbonate of soda and salt in bowl until well mixed. Add avocado puree; stir until well combined. Pour brownie mixture into the prepared tin.
Bake in the preheated oven until a skewer inserted into the centre comes out clean, 35 to 40 minutes.
