Chocolate-covered blueberries, almonds and pretzels

    Salty pretzels, blueberries and whole almonds combine in this dark chocolate treat that makes a wonderful food gift.

    • 450g 70% dark chocolate, chopped
    • 1 tablespoon coconut oil
    • 1 teaspoon vanilla extract
    • 175g blueberries
    • 75g roasted whole almonds
    • 12 thin pretzel crisps

    1. Line a baking tray with a silicone baking mat or baking paper.
    2. Combine dark chocolate, coconut oil and vanilla extract in top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula, until melted, about 5 minutes. Remove from heat and cool to room temperature, about 15 minutes.
    3. Scoop 2 tablespoons of the melted chocolate mixture into a small bowl.
    4. Stir blueberries and almonds into the remaining chocolate mixture. Spread on the prepared baking tray in an even layer. Press pretzel crisps in gently. Drizzle reserved 2 tablespoons chocolate on top.
    5. Freeze until firm, 15 to 20 minutes. Break gently into pieces before serving.
