Easy homemade plum tomato soup

I have made this soup for a few years. A family favourite and I loved eating this hearty soup while growing up. Beautiful with some buttered crusty bread.

Ingredients
Serves: 4
- 1 tablespoon butter
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon plain flour
- 2 teaspoons tomato puree
- 700ml chicken or vegetable stock
- 500g plum tomatoes
- 1 teaspoon sugar
- dried or fresh basil (optional)

- Pop butter into pan on a medium heat. Add onion and garlic and sweat until soft, about 6 minutes.
- Add in the flour and stir until onions and garlic are coated. Add in tomato puree and stir, gently making sure the flour, onions and garlic are coated.
- Pour in the stock a little at a time so the flour mix doesn’t go lumpy.
- Add in all tomatoes and sugar and bring to the boil. Cover and let simmer for 1 hour.
- Near the end of cooking time remove as much tomato skins as you can. These will separate whilst cooking. Then blend the soup to your desired texture. Stir in dried or fresh basil before serving.
Tip
You can pour a little cream over the top of your soup for a more luxurious soup.
If you do not have a blender you can pass the soup through a fine sieve.
