Sultana fruit cake

    This is a quick and easy sultana fruit cake that can be baked as a loaf cake or a round fruit cake.

    Makes: 1 cake

    • 110g butter
    • 225g self raising flour
    • 110g caster sugar
    • 225g sultanas
    • 1 teaspoon mixed spice (optional)
    • 1 large egg or 2 small eggs
    • 7 to 8 tablespoons milk

    1. Preheat oven to 180 C / 160 fan / Gas 4.
    2. Rub the butter and flour until it looks like breadcrumbs. Add sugar, sultanas and mixed spice (optional).
    3. Beat in egg/s and enough milk to make a soft consistency.
    4. Put into a lined 2 lb loaf tin (I use a silicone loaf tin which works well) or a 15cm (6 in) round cake tin. Bake the preheated oven for about 1 hour. Test with a skewer, if it comes out clean you know its done. Cool on a rack.


    I find that weighing and adding items as they are needed for this mix cuts down on time and less mess to clear up afterwards.
