Cheese caraway twists

    The perfect nibble with a glass of wine, these cheese twists with caraway seeds will keep up to one month in an airtight container.

    Makes: 30 cheese twists

    • 250g butter
    • 300g plain flour
    • 250g cheese, finely grated
    • 1 egg
    • For brushing
    • 1 egg yolk
    • 1 dash milk
    • coarse salt
    • caraway seeds

    1. Combine the butter, flour, cheese and egg in a bowl. Knead until it holds together. Cover and chill 30 minutes in the fridge.
    2. Preheat oven to 180 C / Gas 4. Line a baking tray with baking parchment.
    3. Roll out the mixture and cut into 1cm wide strips. Place on the baking tray.
    4. Whisk the egg yolk with a little milk and brush the strips with it. Sprinkle with coarse salt and caraway seeds. Bake until lightly browned, 10 to 15 minutes.
