Baileys® chocolate and orange muffins

    A light, tasty muffin, well laced with Baileys® Irish Cream and brimming with dark chocolate, with a hint of orange. These muffins are very easy and quick to make.

    Makes: 12 muffins

    • 230g plain flour
    • 1/2 teaspoon bicarbonate of soda
    • 1 teaspoon baking powder
    • 80g soft golden sugar
    • 1 orange, zested
    • 1 large egg
    • 150ml Baileys® Irish Cream or similar liqueur
    • 50g unsalted butter, melted
    • 4 teaspoons semi skimmed milk
    • 100g dark chocolate (or milk or white chocolate), chopped

    1. Preheat oven to 200 C / Gas 6. Line muffin tray with paper cases.
    2. Sift flour, bicarbonate of soda, baking powder and sugar into mixing bowl. Add orange zest.
    3. Beat egg and Baileys together. Beat melted butter into Baileys and egg mixture.
    4. Gradually pour Baileys mix into flour and beat with mixer or whisk until light and fluffy. Add milk and continue to whisk or beat.
    5. Gently fold in chopped up chocolate.
    6. Divide between 12 muffin cases and bake until a tester comes out clean, about 15 minutes. Cool on wire rack.


    Muffins will keep in an airtight tin. If there are any left by day 2, give each muffin 10 seconds in microwave for that fresh baked taste and texture.
