Cherry and sultana fruit cake

    This cherry and sultana fruit cake is simple to make, I just put all the ingredients into the bowl and mix together until blended.

    Makes: 1 cake

    • 225g self raising flour
    • 110g butter
    • 110g caster sugar
    • 200g sultanas
    • 2 eggs
    • 7 tablespoons milk
    • 1 teaspoon vanilla extract
    • 25g cherries

    1. Preheat oven to 180 C / 160 fan / Gas 4.
    2. Put all ingredients except the cherries in a bowl together and mix with the electric hand mixer until blended.
    3. Put into a lined 2 lb loaf tin (I use a silicone loaf tin which works well) or a 15cm (6 in) round cake tin. Place cherries on the top.
    4. Bake in the preheated oven for about 1 hour 15 minutes. Test with a skewer, if it comes out clean you know it's done. Cool in the tin for 10 minutes then turn out onto a rack.
