Egg fried rice with soy sauce


    You can make this easy and cheap dish with freshly cooked rice or leftover rice.

    Serves: 2 

    • 200g rice
    • 2 eggs
    • salt and pepper
    • 1 tablespoon olive oil or butter
    • 1 to 3 tablespoons soy sauce, to taste

    1. Put the rice in a pan and follow cooking instructions on the package.
    2. About 5 minutes before the rice is done, crack eggs in a bowl and whisk them up with a sprinkle of salt and pepper. Put the eggs in a frying pan to make an omelette.
    3. Put the omelette on a chopping board and cut into long thick slices, then chop into small pieces.
    4. When the rice is soft take it off the heat, drain if necessary and put it to the side.
    5. Put the rice in the frying pan with oil and add the pieces of omelette. Stir with a spatula whilst adding the soy sauce to taste.
    6. Fry it for a few minutes until the egg is set and the rice slightly browned at the bottom of the pan. Add more soy sauce to taste.
    7. Put the egg fried rice in a bowl to eat on its own or serve as a side dish.
