Rosemary oil

    Rosemary oil is great for roasted potatoes or vegetables. I always have a bottle of this in the cupboard and often give it away as a gift.

    Makes: 2 500ml bottles

    • 2 small bunches fresh rosemary (about 12 small sprigs)
    • 1L extra virgin olive oil

    1. Wash rosemary and dry very well with kitchen paper. Place each bunch in a 500ml sterilised jar and pour half of the olive oil on top.
    2. Screw on lids and let sit for at least 2 weeks in a warm sunny place like a windowsill.
    3. Strain through a fine sieve into sterilised glass bottles. Store in a cool and dark place.
