Rumkugeln (German rum truffles)

    Known in Germany as 'Rumkugeln', these luxurious chocolate truffles are made with butter and rum, then covered with a chocolate casing and chocolate sprinkles.

    Serves: 20 

    • Casing
    • 100g plain chocolate, grated
    • 100g icing sugar
    • 50g ground almonds
    • 1 egg white
    • 1 tablespoon rum
    • Filling
    • 20g butter, softened
    • 1 egg yolk from a hard boiled egg
    • 2 to 3 teaspoons vanilla sugar
    • 1 dash rum
    • For the decoration
    • chocolate sprinkles

    1. Mix all the ingredients for the casing in a bowl until evenly combined. Shape into a log of about 4cm in diameter. Cut into 20 even slices and gently flatten them between your palms.
    2. For the filling add all ingredients in a bowl and stir until smooth and creamy. Distribute small amounts of the filling among the flattened slices and carefully shape the chocolate casing around the filling so it's fully covered. Dredge the finished truffles in chocolate sprinkles. Store in an airtight container in the fridge.
