This easy peanut stir fry sauce will boost the flavour of any noodle dish with its Thai-style mixture of sriracha, ginger, garlic and coconut milk.

130g peanut butter
2 tablespoons soy sauce
2 teaspoons rice vinegar
1 1/2 teaspoons minced fresh ginger
1 teaspoon honey
1 teaspoon sriracha sauce, or to taste
1 teaspoon sesame oil
1 teaspoon minced garlic
180ml coconut milk

Combine peanut butter, soy sauce, rice vinegar, ginger, honey, sriracha sauce, sesame oil and garlic in a saucepan over medium-low heat. Add coconut milk; cook and stir until sauce is thickened to your desired consistency, 10 to 15 minutes.
