2 1/2 tablespoons neutral vegetable oil or rapeseed oil
225ml buttermilk, at room temperature, more as needed
apple slices, cranberries or other toppings of your choice
cinnamon sugar (optional)

Preheat and grease your waffle iron.
In a bowl mix flour with salt, baking powder, bicarbonate of soda and mixed spice.
In another bowl beat the eggs. Stir in the oil, then the buttermilk all is well blended.
Gradually add the liquid ingredients to the dry ingredients flour and stir well until smooth and no lumps or traces of flour remain, also scraping over the bottom of the bowl. If the batter is very stiff, add more buttermilk, 1 tablespoon at a time.
Add about 1/2 small cup batter for each waffle and bake till golden brown and crisp.
Serve topped with whipped cream, apple sauce, apple slices, dried or fresh cranberries or any other topping that strikes your fancy during Christmas season, and dust with cinnamon sugar.
