These soft cookies are flavoured with peppermint extract and can be made with dark or white chocolate chips.

300g caster sugar
225g butter, softened
1 egg yolk
10 drops green food colouring
1 teaspoon peppermint extract
400g plain flour
2 teaspoons baking powder
1 teaspoon bicarbonate of soda
1 teaspoon cream of tartar
1/2 teaspoon coarse sea salt, or to taste
350g dark chocolate chips

Beat sugar and butter in a large bowl with an electric mixer until light and fluffy. Beat in eggs, egg yolk, green food colouring and peppermint extract until smooth.
Combine flour, baking powder, bicarbonate of soda, cream of tartar and salt in a separate bowl. Mix into egg mixture until cookie dough comes together. Fold in chocolate chips. Cover the cookie dough and refrigerate until firm enough to scoop, about 1 hour.
Preheat oven to 180 C / Gas 4. Line 2 baking trays with parchment.
Drop spoonfuls of the cookie dough 5cm apart onto the baking trays.
Bake in the preheated oven until edges are golden, 8 to 10 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.
