Parmesan and broccoli stuffing balls

    Frozen broccoli and Parmesan cheese are blended with stuffing and rolled into delicious bite-size balls. Great as a Christmas side dish or served as a savoury party nibble.

    Serves: 36 

    • 275g chopped frozen broccoli, thawed
    • 175g dry stuffing mix of your choice
    • 40g grated Parmesan cheese
    • 1 medium onion, chopped
    • 6 eggs, beaten
    • 175g butter, melted
    • 1 teaspoon freshly ground black pepper
    • 1/2 teaspoon garlic salt

    1. Place broccoli in a medium saucepan with enough water to cover; bring to the boil. Cook 5 minutes. Uncover and continue cooking 2 to 3 minutes, until tender. Remove from heat, drain and cool.
    2. In a large bowl, mix broccoli, stuffing mix, Parmesan cheese, onion, eggs, melted butter, pepper and garlic salt. Cover and chill in the fridge for approximately 1 hour, until moisture has been absorbed.
    3. Preheat oven to 170 C / Gas 3.
    4. Roll the chilled mixture into 2.5cm balls; arrange on a baking tray.
    5. Bake 15 to 20 minutes in the preheated oven, until golden brown.
