Warm chickpea salad

    This warm chickpea salad is seasoned with garlic, red onion, parsley and mint. It's very quick and easy to make.

    Ingredients
    Serves: 10 

    • 2 tablespoons olive oil
    • 75g diced red onion
    • 2 (400g) tins chickpeas, drained
    • 1/2 teaspoon minced garlic
    • 1 teaspoon crushed chilli flakes
    • 1 teaspoon fresh lemon juice
    • salt and ground black pepper to taste
    • 1 teaspoon chopped fresh parsley
    • 1 teaspoon chopped fresh mint

    1. Heat olive oil in a pan over medium heat. Cook and stir onion in the hot oil until softened, 5 to 10 minutes. Add chickpeas and garlic to onion; cook and stir until heated through, about 5 minutes. Mix crushed chilli flakes, lemon juice, salt and pepper into chickpea mixture; cook and stir for 3 minutes more. Stir parsley and mint into salad. Serve warm.
