Simple pan-fried tofu

    Pan-fried slices of tofu are topped with sizzling spring onions and soy sauce in this simple vegan recipe needing only 4 ingredients.

    Serves: 4 

    • 350g extra-firm tofu
    • 2 tablespoons vegetable oil, divided
    • 25g chopped spring onions
    • 2 tablespoons soy sauce

    1. Place tofu onto a plate and place another plate on top. Set a 1.5kg to 2.5kg weight on top. Press tofu for 20 to 30 minutes; drain and discard the accumulated liquid.
    2. Cut tofu into strips or slices about 1/2cm thick.
    3. Heat 1 tablespoon oil in large pan over medium-low heat. Cook tofu strips in the oil until golden brown, 2 to 3 minutes per side. Stack tofu strips horizontally in a dish.
    4. Heat remaining 1 tablespoon oil in the same pan. Add spring onions; cook and stir until fragrant, 10 to 20 seconds. Spoon spring onions over tofu while they are still sizzling. Coat with soy sauce. Let sit until tofu soaks up flavours, 3 to 5 minutes.
