Slow cooked chinese style pork belly

    This is a recipe that was inspired by a recipe on another website, I have adapted it to suit my own taste.

    Serves: 4 

    • 3 cloves garlic, crushed
    • 5cm root ginger, finely grated (but not peeled)
    • 3 tablespoons soy sauce
    • 1kg pork belly, cut into strips (remove rind but not the fat)
    • 2 medium onions, sliced
    • 1 tablespoon plain flour

    1. mix garlic, ginger and soy sauce together. Cover the pork with the mixture and leave it to marinate for a few hours (don't refrigerate).
    2. Distribute the onion slices over the bottom of the slow cooker with sliced onions and add the pork.
    3. Cook on high for 4 hours.
    4. Remove the pork. Place it in a pan with 1/2 of the cooking juice and and fry on high until pork is brown and juices have evaporated.
    5. Pour remaining juice and onion in a separate pan. Dissolve flour in 2 tablespoons water and add, whisk at medium heat until gravy has thickened.


    this is great with mash potatoes or colcannon (I have this as a recipe up if you'd like to try it as well)
