Vegan coconut brownies

    These gluten free, dairy free, vegan brownies are made with rice flour, coconut milk, coconut oil and apple sauce.

    Serves: 12 

    • 300g rice flour
    • 200g caster sugar
    • 65g cocoa powder
    • 100g soft brown sugar
    • 1 teaspoon salt
    • 1 teaspoon baking powder
    • 240ml unsweetened coconut milk
    • 180g unsweetened apple sauce
    • 60g desiccated coconut or flaked coconut
    • 4 tablespoons coconut oil

    1. Preheat oven to 180 C / Gas 4. Grease a baking dish.
    2. Mix rice flour, caster sugar, cocoa powder, brown sugar, salt and baking powder together in a large bowl; add coconut milk, apple sauce, coconut and coconut oil. Blend the mixture until it thickens; pour into the prepared baking dish.
    3. Bake in the preheated oven until the top is dry and the edges have started to pull away from the sides of the pan, about 30 minutes. Cool about 10 minutes before cutting into squares.
