Fresh cranberry oatmeal cookies

    A soft, chewy cookie made with oats, fresh cranberries and walnuts. You can add white chocolate chips to balance the tart flavour of the fresh cranberries, if you like. Dried cranberries will also work well in this recipe when fresh cranberries aren't available.

    Serves: 24 

    • 140g butter
    • 140g soft dark brown sugar
    • 1 teaspoon vanilla extract
    • 2 eggs
    • 1 1/2 teaspoons bicarbonate of soda
    • 1 pinch salt
    • 200g wholemeal flour
    • 75g rolled oats
    • 225g fresh cranberries, chopped
    • 100g chopped walnuts

    1. Preheat oven to 180 C / Gas 4.
    2. Blend butter and sugar until fluffy. Add eggs and vanilla and mix well. In a separate bowl sift flour, bicarbonate of soda and salt together. Stir into butter mixture. Add oats and fold in nuts and chopped cranberries. Drop spoonfuls of cookie dough onto ungreased cookie sheets, spaced at least 5cm apart.
    3. Bake 8 to 10 minutes in the preheated oven, until the edges are crisp and the centres appear dry. Cool on wire racks.
