Orange curd cheesecake dessert

    A light and lovely cheesecake dessert made with a ginger nut base, Greek yogurt, soft cheese and orange curd.

    Serves: 4 

    • For the orange curd
    • 2 oranges
    • 2 eggs
    • 2 tablespoons butter
    • 120g caster sugar
    • For the base
    • 8 gingernut biscuits
    • 1 1/2 tablespoons butter
    • 250g creamy soft white cheese
    • 150g Greek-style (or thick homemade) yogurt
    • 3 tablespoons icing sugar

    1. For the orange curd, finely grate the orange rind, squeeze the oranges and remove the pips. Set to the side.
    2. Beat the eggs in a bowl.
    3. Place a metal boil over a pan with simmering water. Add 2 tablespoons butter and let it melt. Add the orange rind, juice and caster sugar.
    4. Slowly add the eggs and stir continuously. Stir until the curd thickens. Set to the side.
    5. For the base, melt 1 1/2 tablespoons butter. Crumb the biscuits and mix into melted butter.
    6. Spread the base evenly across the base of 4 glasses and place in the fridge to cool for 10 minutes.
    7. For the cheesecake topping beat the soft cheese, yoghurt and icing sugar. Add the curd and spread evenly across the biscuit bases.
    8. Chill until ready to eat.
