Fennel and mandarin salad

    This fresh, colourful winter salad also works well made with half fennel and half celery.

    Ingredients
    Serves: 2 

    • 1 fennel bulb, trimmed and diced
    • 3 small mandarins, peeled and segmented or 1 (298g) tin of mandarin segments, drained
    • 2 tablespoons olive oil
    • 2 tablespoons white wine vinegar
    • salt and ground black pepper to taste

    1. Combine the fennel and mandarin segments in a bowl. Add the olive oil and vinegar. Season with salt and pepper; stir. Allow to sit 10 to 15 minutes before serving.
