Cranberry, walnut and orange salad

    A festive salad that is easy to make, and combines the traditional flavours of cranberries, orange, candied walnuts and blue cheese.

    Serves: 4 

    • 150g mixed salad greens with spinach
    • 100g dried cranberries
    • 175g candied walnuts (see note)
    • 3 small mandarins, peeled and segmented or 1 (298g) tin of mandarin segments, drained
    • 100g crumbled blue cheese
    • 1 avocado - peeled, pitted and diced
    • 2 tablespoons vinaigrette dressing, or to taste

    1. Place the salad greens into a salad bowl; sprinkle with dried cranberries, walnuts, mandarin segments, blue cheese and avocado chunks. Drizzle the salad with the dressing; toss and serve.

    good salad, served it on Christmas for 20 people, got great feedback! however, i could not find the dressing suggested in the recipe, so i used some rasberry vinegrette i had on hand, i think next time i would use a balsamic vinegrette.  -  15 Jan 2010  (Review from Allrecipes US | Canada)


    This is a delicious salad! I have been making a salad similar to this, however, I use feta cheese, fresh apple chunks, and Maple Grove Fat-Free Cranberry Balsamic Salad Dressing because I have been dieting.     VERY TASTY. We didn't have mandarin oranges on hand and it still tasted good, but I'm sure it would have been even better with the oranges.
