Funfetti cake

    Use rainbow sprinkles to take a simple cake recipe and make funfetti cakes to delight the little ones.

    Makes: 4 20cm cakes

    • 300g golden caster sugar
    • 450g butter, softened
    • 1 tablespoon vanilla bean paste
    • 8 eggs, beaten
    • 450g self-raising flour
    • 1 teaspoon baking powder
    • 1 teaspoon salt
    • 4 tablespoon whole milk
    • 200g rainbow sprinkles, plus extra to decorate

    1. Preheat oven 180 C / Gas 4. Grease and line 4 (20cm) cake tins.
    2. Mix together sugar, butter and vanilla paste in a large bowl and beat with an electric whisk until pale and fluffy. Add eggs gradually.
    3. Sift flour and baking powder with salt and fold into the cake batter. Pour in milk and beat mixture. Scatter sprinkles and ripple through cake batter before dividing between the cake tins.
    4. Bake until golden, 25 to 30 minutes. Swap the tins around in the oven after 15 minutes to ensure they cook evenly. Cool on wire racks completely before icing.
