Asian beef noodle soup

    An Asian inspired noodle soup with strips of steak and vegetables in a fragrant ginger broth that's easy to make.

    Ingredients
    Serves: 4 

    • 1 teaspoon oil, or as needed
    • 175g steak, thinly sliced
    • 1 teaspoon onion powder
    • 1 teaspoon garlic powder
    • 1/2 onion, chopped
    • 1L beef stock
    • 3 tablespoons brown sugar
    • 2 tablespoons soy sauce
    • 1 teaspoon ground ginger
    • 1 teaspoon sriracha hot chilli sauce, or more to taste
    • 225g rice noodles, broken into pieces
    • 125g diced carrots
    • 75g sliced cabbage
    • 1/2 green pepper, sliced
    • 1/2 red pepper, sliced
    • 60g diced celery

    Method

    1. Heat oil in a stock pot over medium heat; Add sliced steak and cook until it begins to brown, about 2 minutes. Season with onion powder and garlic powder. Stir chopped onion into steak mixture; cook and stir until onion has softened, about 3 minutes.
    2. Stir beef stock, brown sugar, soy sauce, ginger and sriracha sauce into beef mixture; bring to the boil. Reduce mixture to a simmer and stir in rice noodles, carrots, cabbage, green pepper, red pepper and celery; cover and simmer on low, stirring occasionally, until noodles are tender, about 8 minutes.
