Mashed potato with pumpkin

    Give your usual mashed potatoes an upgrade, with pumpkin puree, coconut milk, rosemary and garlic for a comforting side dish.

    • 2 1/2 large potatoes, peeled
    • 165g pumpkin puree
    • 120ml coconut milk or other milk
    • 2 tablespoons butter
    • salt and ground black pepper to taste
    • 1 pinch garlic powder, or to taste
    • 1 pinch dried rosemary, or to taste

    1. Place potatoes into a large pot and cover with salted water; bring to the boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain. Add pumpkin puree, coconut milk, butter, salt, pepper, garlic powder and rosemary; mash.
