Easy eggless pancakes

    Over the past few years I've tried multiple pancake recipes, both with eggs and without. But I was never really happy with any of them. So through trial and error, I've finally arrived at the simplest, yet easiest recipe ever.

    Makes: 5 pancakes

    • 125g plain flour
    • 1 teaspoon baking powder
    • 1 pinch salt
    • 240ml milk
    • 2 tablespoons melted butter
    • butter for frying

    1. Sieve the flour with baking powder to ensure it is well mixed. Add salt.
    2. Pour milk on the flour mixture and stir until all the flour is mixed well with the milk. There is no need for a whisk, just a spatula works well enough.
    3. Add the melted butter and mix well.
    4. If the pancake batter is too thick, you can add 1 tablespoon or so more milk. Do not over-mix the batter: just until everything is combined and there are no lumps.
    5. Heat a non stick pan with a little butter on it. Spread the butter all around. Pour a scoop full of batter on the pan, spread till you get the thickness you want. Flip once bubbles appear and the pancake leaves the pan easily.
    6. Cook until both sides are done. It takes around 4 minutes, 2 minutes for each side.


    You can have the pancakes with butter or syrup. If you like your pancakes sweeter, you can add sugar to the batter.
