Marzipan with egg

    Making marzipan from ground almond and icing sugar is superior to ready-made marzipan or almond paste and it does not take much time. This recipe uses egg, which is beaten with the sugar in a bain marie before mixing it with the almonds.

    • 200g icing sugar
    • 100g golden caster sugar
    • 1 large egg
    • A few drops almond extract
    • 550g ground almonds

    1. Begin by sifting the icing sugar, golden caster sugar and egg into a bowl, then stir in 1 teaspoon water to make it smooth.
    2. Place the bowl over a pan with simmering water and whisk until the mixture is thick and fluffy, about 5 minutes.
    3. Remove from the heat and knead until smooth, about 10 minutes.
    4. Transfer to a clean airtight container and use for cake or stollen.
