To prepare the muesli, mix all the ingredients and toast them in a pan on low heat until lightly coloured and fragrant.
For the pancakes combine all the ingredients in a medium bowl. Add some muesli to your pancake batter but reserve some to put on top.
On medium heat, grease the pan with oil and cook your pancakes until golden brown, 2 minutes on each side. Sprinkle the remaining muesli and drizzle with honey.
