Simple banana and cinnamon cookies

    These cookies have a soft cake-like texture and taste great. If you'd rather have them be a bit less cake-like, replace the self-raising flour with plain flour. The recipe is easily made vegan by replacing butter with any vegan fat-spread.

    Makes: 20 cookies

    • 170g unsalted sutter
    • 200g light brown soft sugar
    • 2 medium-sized ripe bananas, mashed
    • 1 teaspoon vanilla extract
    • 2 teaspoons ground cinnamon
    • 260g self-raising flour
    • 3/4 teaspoon salt
    • icing sugar to sprinkle

    1. Pre-heat the oven to 190 C / Gas 5. Prepare two trays with greaseproof paper coated with a thin layer of oil.
    2. In a large bowl beat the butter and sugar until most of the granules have dissolved into the butter. The colour will lighten and it should be fluffy.
    3. Beat in the bananas until the mixture is smooth. Add vanilla and cinnamon.
    4. Sift the flour and salt into the mixture then fold it into the mixture.
    5. Spoon heaped tablespoons onto the baking trays about 3.5cm (1.5 in) apart. Bake in the preheated oven for 10 minutes.
    6. Once cooled, sprinkle icing sugar over and serve.
