Great Grandmother's bread pudding

    This bread pudding is made from stale bread. The recipe was my great grandmother's. The pudding can be eaten hot with custard or cold with cream or ice cream

    Makes: 1 bread pudding

    • 1/2 loaf stale white bread, sliced or uncut
    • 500g dried mixed fruit
    • 350g (12.5 oz) self raising flour
    • 2 teaspoons mixed spice
    • 180g (6 oz) dark brown soft sugar
    • 210g (7 oz) unsalted butter, melted
    • 1 teaspoon vanilla extract
    • glace cherries to taste

    1. Remove all the crust from the bread and soak the bread and dried fruit in cold water for 1 hour. Drain off excess liquid.
    2. Preheat the oven to 190 C / Gas 5.
    3. Place bread and fruit in a bowl and mix with an electric mixer adding flour, spice and sugar until well mixed together.
    4. Add the melted butter and vanilla and stir the mixture with a spatula.
    5. Place the mixture in a well buttered 23cm (9 in) square baking tin or a loaf tin if preferred. Decorate with glace cherries if desired.
    6. Bake in a preheated oven at 190 degrees for 90 minutes
    7. Allow to cool in the tin befor turning out, then slice into portions
