Easy spicy bean pate

    This is yummy with crackers, toast or as a baked potato filler. It uses store bought cupboard staples and my family loves it.

    Ingredients
    Serves: 4 

    • 1 red onion, finely chopped
    • 1 tablespoon oil of your choice
    • 1 tablespoon smooth peanut butter
    • 1 lemon, juiced
    • sprinkle of chilli flakes
    • 2 teaspoons jarred garlic
    • 1 (400g) tin butter beans, drained

    Method
    Prep:10min  ›  Cook:5min  ›  Extra time:30min chilling  ›  Ready in:45min 

    1. Soften the onion in the oil for 4 to 5 minutes.
    2. In a bowl mix the onions with the peanut butter, lemon juice, chilli flakes and garlic and stir.
    3. Add the drained butter beans and use a fork to mash everything together. You could whizz with a hand wand blender but keep it a little chunky.
    4. Put into a dish, cover with cling film and chill for 30 minutes.

    Tip

    If I have fresh parsley or chervil I chop this and add it with the chilli flakes but don't use dried herbs. If I have them, I garnish with mini gherkins or halved, stuffed olives.
